Ingredients
12 ounces cooked butter squash chunks
1 apple, peeled, cored, sliced
7 ounces spinach
1 teaspoon garam masala
1 ½ cup cooked quinoa
Extra:
½ teaspoon salt
¼ teaspoon cayenne pepper
1 teaspoon and 1 tablespoon grapeseed oil
Directions

  1. Take a pan, place it over medium heat, add 1 teaspoon oil and when hot, add squash
    piece, sprinkle with garam masala and ¼ teaspoon salt, stir until mixed and then cook
    for 5 minutes until hot.
  2. Transfer squash mixture to a bowl, return skillet over medium heat, add remaining oil
    and when hot, add spinach, season with remaining salt, and then cook for 5
    minutes until hot.
  3. Divide quinoa between two bowls, top with apple, spinach, and squash mixture and
    then serve.
